My client based, a local NHS trust based in Manchester, is looking for an Executive Head Chef to join their team on a temp to perm basis.

The main purpose of the role is to manage, maintain and control food production service, optimising current resources to stay in the allocated catering service budget.

Due to the nature of the role, you will need to be able to pass a full DBS.

Duties will include but not limited to:

  • Work with the senior catering manager to identify and manage all risks within the catering department
  • To have knowledge of the procedures and practices relating to the management and provision of food services, including HACCP, COSHH and Health and Safety
  • To carry out menu planning with full knowledge of standard recipes and food production in large scale catering operations
  • To audit and review the temperature recording procedures in the catering department relating to HACCP system
  • Completion of staff rota’s, ensuring a full team at all times
  • To review and monitor performance requirements for staff and suppliers
  • Carry out analysis and investigate to resolve any catering issues
  • To keep the food wastage percentages to a minimum and carry out regular waste surveys at ward level
  • Manage catering and food production documentation in line with the trusts policy
  • Maintain records of catering complaints, incidents and ward visits to provide reports for the senior catering manager monthly.
  • To work in different areas of the department if required to achieve the end goal
  • Managing delivery of stock
  • To participate in the recruitment process of new staff members
  • Carry out annual PDP/appraisal meetings
  • Responsible for dealing with staff issues informally, e.g. counselling for grievances, poor performance etc and keeping documented evidence for issues


  • Management qualifications, Level 3 knowledge or equivalent
  • Qual 7061/7062
  • Sound knowledge of Food Hygiene Level 4


  • Large scale industrial food service in a managerial capacity
  • Awareness of budgetary control and financial planning
  • Experience of working in a fast paced environment
  • Have the ability to cope with increased workloads at short notice and requests for out of hours service as required
  • Training staff
  • Participated in external reviews and compiled written reports
  • Experience of presenting

Salary: Band 4, £28,407 – £34,581 dependant on experience

Hours: Working 5 days out of 7, so some weekends included, between 7am-7pm

Role: Immediate start, subject to passing a DBS check
